- 2 tablespoons olive oil

- 1 cup (220 g) pearled barley
- 1 ½ cups (375 ml) salt-reduced chicken stock
- 1 cup (250 ml) orange juice
- 1 teaspoon dried thyme, crushed
- 4 skinless, bone-in chicken-breast halves (about 800 g)
- ½ cup (63 g) dried cranberries
- 1 orange, thinly sliced (optional)
- 1. Preheat the oven to 180°C. Lightly coat a 3-litre capacity ovenproof dish with the cooking spray.
- 2. Heat the oil in a large frying pan over medium heat. Add the onion and garlic, then cook until tender, about 2 minutes. Add the barley and cook for 2 minutes. Add the stock, orange juice and thyme, then bring to the boil. Carefully pour into the dish. Top with the chicken breasts, then cover and bake for 45 minutes.
- 3. Uncover the dish and stir in the cranberries. Top each chicken breast with 1 or 2 orange slices, if desired. Bake until the chicken is cooked and the barley is tender, about 15 minutes.
